Flight Catering

1. What is the flight catering?

Flight catering is the all services, which are presented onboard during the flight. Depending on the developing technology, modernization and today’s condition, the catering planning is a very comprehensive and detailed activity. The meal tray is passed through a lot of steps before servicing to the passengers. All these steps occur in the Catering Service System, which has been formed by airline, catering firms and equipment vendors.

2. What are the criteria of planning the flight catering?

Profile of the flight route, flight time, departure and arrival times, passenger profile, nutrition habits, aircraft type and catering loaded destination are taken into consideration in planning of catering. Catering is loaded according to the aircraft types with the direction of tray set-up and loading plans.

3 . What kind of meal services do you have?

In Domestic flights, we serve breakfast and meal in snack style to our business and economy cabin passengers according to the flight time. For the flights till 10:00 am ; Breakfast menus accompanied by butter, jam and delicatessen assortments, with a breakfast plate a variety of Böreks “Flaky pastry” Assortments of warm breads, simits “savory roll covered with sesame seeds” are served for our Business Class passengers. For the flights after 10:00 am ; Meals made with olive oil and cold delicatessen assortments , hors d'ouvre plate salads with sauces and desserts are served alternately for Business Class Passengers . All these meals are served with assortments of warm breads.

For Economy Class Passengers; after the changes applied from 11 February 2005 Sandwiches are being presented in a box which also includes an Eti or Ülker brand sweet, hazelnuts, a 125 cc-glass of water and a moist towell. We also serve salads with crackers which are served alternately for the flights after breakfast hours.For the flights between 21:00 and 23:59 hours we serve Eti Crax as a lighter alternative instead of sandwiches in our new domestic boxes.

In domestic business class we offer alcoholic and non-alcoholic drinks. In domestic economy class only non-alcoholic drinks are served.

In International flights; we serve cold/hot breakfast, cold/hot meal, light meal, snack services, alcoholic and non-alcoholic drinks.
For the flights over 6 hours and extended range, we offer amenity kit for business class passengers and relaxation kit for economy class passengers to satisfy passengers needs during the flight. Children sets are given to our child passengers for playing on extended range flights.

4. What are the special meals served on board? How they can be ordered?

Passenger special meal request can only be handled if you can call our reservation offices at least 24 hours before of your departure time. If the passenger request special meal while checking in or less than 24 hours from departure, the meal can not be loaded to the aircraft. The varieties of the special meals are : vegetarian, diabetic, religious (kosher) , healthy foods, child and baby meals ex..

5. Why don’t you have special Turkish meals on your flights?

As a global carrier, TURKISH AIRLINES, are choosing meal menus taking into consideration of both Turkish and foreign passengers culinary culture. Meal menus are also changed occasionally after evaluating passenger needs and requests. But some Turkish foods which are not convenient to serve on board can not be found on our flights.

6. What kind of distinctive catering features do you have that makes you different from other airlines?

Silver, fine bone china and porcelain are used in extended range flights. Also in International flights there is fresh orange juice and champagne as a welcome drink for business class. In all International flights , coffee and liqueur are served as a digestive. All alcoholic and non-alcoholic beverages are free of charge .

7. Why Turkish special white cheese and other type of Turkish cheeses are not preferred in menu?

White cheese is not produced as a standardized product in Turkey. Same company produces cheeses with different microbiologic tissues which prevents proper slicing results splitting of cheese. Because of this reason Turkish white cheese is not preferred in menus. Also other kind of Turkish cheeses are not appropriate on our flights because standardization and hygiene can not be accomplished on high volume services.

8. Why doesn't exist PRODUCTION and EXPIRY DATES on products of domestic lines' packed products and why do they seem stale ?

All products served on our flights are produced on a daily basis which is the most important requirement of our agreeements between us and catering companies.
These products are exclusively produced for our passengers and is not sold as a retail product.
According to hygiene rules of international aviation rules, returning flights unused meals can never been used for another flight. This application is very important for food safety and also for human health that we provide to save preparing products against returned foods (cross contamination) and keep the cold chain. These daily preparing foods has been hold in cold rooms after production period and get served daily also.

9. What kind of alcoholic drinks and wines do you serve?

We serve local and foreign wines for Business class cabin in extended range flights. Besides our fine wines, world's famous wine producer countries' ( Argentina , America , and France ) wines are served as red and white which cycles periodically. Additionally liqueur, cognac, gin, vodka, turkish raki, beer and some kind of whiskies are served in our international business class service. Local wines, turkish raki, gin, whisky, vodka and beer are also available in our international economy class services.

Alcoholic beverages are not served on economy cabin of domestic flights.
